Water plays an important role in your products. First, it allows you to make emulsions. Emulsions are mixtures of water and fat, one dispersed in the other in the form of fine droplets. All creams are emulsions, and it is the very process that gives them their pleasant texture. Water is also used to make gels, and overall, most liquid or pasty forms, except for oils, which are liquid, but do not contain water. In terms of sensory, water brings freshness, and avoids the shiny effects on the skin at the end of the application, which we tend to call a "greasy finish".
